If you want to cook yourself, maybe even all from scratch, you need your pantry, fridge and freezer well stocked with spices and other kitchen essentials.
For gluten- and dairy-free or other special diets you may need certain alternative flours etc.

Many foods and spices in recipes can be exchanged for some you have available or can be left out.
